Seafood Cake | Sanjeev Kapoor Khazana

Bite sized savoury cakes made with crabmeat, fish and shrimp - seafood lovers love this.

SEAFOOD CAKES - (Serves - 4)

Ingredients

½ cup chopped Indian salmon (rawas) fish
½ cup tinned crab meat
½ cup chopped shrimps
1 medium onion, finely chopped
2-3 spring onion bulbs, finely chopped
1 tablespoon chopped garlic
2 tablespoons mayonnaise
1 teaspoon mustard sauce
2 tablespoons chopped fresh parsley
1 teaspoon paprika
1-2 green chillies, finely chopped
1 tablespoon Cajun spice mix
Salt to taste
Crushed black peppercorns to taste
2-3 drops Tabasco sauce
2-3 tablespoons fresh breadcrumbs
1 tablespoon lemon juice
Olive oil for shallow-frying
Tomato ketchup for serving

Method

1. Take fish, crab meat, shrimps, onion, spring onion bulbs, garlic, mayonnaise, mustard sauce, parsley, paprika, green chillies, Cajun spice mix, salt, crushed peppercorns, Tabasco sauce and breadcrumbs in a bowl and mix. Add lemon juice and mix well.
2. Divide the seafood mixture into equal portions. Dampen your palms with some water and shape each portion into small cakes.
3. Heat some olive oil in a non-stick pan. Shallow-fry cakes till golden and fully cooked. Drain on absorbent paper.
4. Serve hot with tomato ketchup.
