Seafood Pad Thai | Sanjeev Kapoor Khazana

A popular recipe from the oriental cuisine loaded with seafood.

SEAFOOD PAD THAI

Ingredients

8-10 small prawns, shelled and deveined
½ cup boneless fish fillets, cut into cubes
½ cup clams
2 cups flat rice noodles, boiled
3 tablespoons oil
2 tablespoons chopped garlic
2 spring onion bulbs, chopped
Salt to taste
2 tablespoons soy sauce
1 fresh red chilli
1 medium green capsicum, cut into strips
1 tablespoon brown sugar
Juice of ½ lemon
1 tablespoon toasted peanuts
1 tablespoon chopped spring onion greens + for garnishing
½ cup bean sprouts

Method

1. Heat 2 tablespoons oil in a non-stick pan. Add 1 tablespoon chopped garlic and 1 tablespoon chopped spring onion bulbs and sauté till onion turns golden.
2. Add prawns and toss to mix. Add fish cubes and clams and mix well. Add salt and 1 tablespoon soy sauce, toss to mix, cover and cook on medium heatfor 2-3 minutes.
3. Heat remaining oil in another non-stick pan. Add remaining garlic and sauté for 30 seconds.
4. Slice red chilli diagonally and add to the pan. Add capsicum and toss to mix. Add remaining spring onion bulbs and sauté till golden.
5. Add noodles, remaining soy sauce, brown sugar and salt and toss to mix.
6. Add prepared seafood mixture to the noodles and toss to mix. Add lemon juice, peanuts, spring onion greens and bean sprouts and mix well.
7. Serve hot garnished with spring onion greens.

Preparation time: 8-10 minutes
Cooking Time: 15-20 minutes
