A popular recipe from the oriental cuisine loaded with seafood.SEAFOOD PAD THAIIngredients8-10 small prawns, shelled and deveined½ cup boneless fish fillets, cut into cubes½ cup clams2 cups flat rice noodles, boiled3 tablespoons oil 2 tablespoons chopped garlic2 spring onion bulbs, choppedSalt to taste2 tablespoons soy sauce1 fresh red chilli 1 medium green capsicum, cut into strips1 tablespoon brown sugarJuice of ½ lemon1 tablespoon toasted peanuts1 tablespoon chopped spring onion greens + for garnishing½ cup bean sproutsMethod1. Heat 2 tablespoons oil in a non-stick pan. Add 1 tablespoon chopped garlic and 1 tablespoon chopped spring onion bulbs and sauté till onion turns golden. 2. Add prawns and toss to mix. Add fish cubes and clams and mix well. Add salt and 1 tablespoon soy sauce, toss to mix, cover and cook on medium heatfor 2-3 minutes.3. Heat remaining oil in another non-stick pan. Add remaining garlic and sauté for 30 seconds. 4. Slice red chilli diagonally and add to the pan. Add capsicum and toss to mix. Add remaining spring onion bulbs and sauté till golden. 5. Add noodles, remaining soy sauce, brown sugar and salt and toss to mix.6. Add prepared seafood mixture to the noodles and toss to mix. Add lemon juice, peanuts, spring onion greens and bean sprouts and mix well.7.
