Fish pieces marinated with thai red curry paste and other ingredients, skewed in satay sticks and cooked till perfection.SEAFOOD SATAYIngredients250 grams boneless fish, cut into cubes6-8 medium prawns, deveined1 tablespoon Thai redcurry paste5-6 fresh basil leaves1-2 fresh red chillies1 tablespoon lemon juice2 tablespoons oil1 tablespoon brown sugarSalt to tasteFresh scraped coconut for sprinkling½ medium carrot, cut into juliennes¼ cup green capsicum curlsMethod1. Combine Thai redcurry paste, shredded basil, finely chopped red chillies, lemon juice, 1 tablespoon oil, brown sugar and salt into a bowl and mix well. Add fish cubes and prawns and mix well. Set aside to marinate for 30 minutes. 2. Insert fish and prawns in satay sticks and repeat the procedure till all the ingredients are used.3. Heat remaining oil in a non-stick pan.4. Sprinkle coconut over the prepared satays and cook in hot oil till evenly done.5. Place carrot and bell pepper in the centre of serving plate.
