Seafood Satay | Sanjeev Kapoor Khazana

Fish pieces marinated with thai red curry paste and other ingredients, skewed in satay sticks and cooked till perfection.

SEAFOOD SATAY

Ingredients

250 grams boneless fish, cut into cubes
6-8 medium prawns, deveined
1 tablespoon Thai redcurry paste
5-6 fresh basil leaves
1-2 fresh red chillies
1 tablespoon lemon juice
2 tablespoons oil
1 tablespoon brown sugar
Salt to taste
Fresh scraped coconut for sprinkling
½ medium carrot, cut into juliennes
¼ cup green capsicum curls

Method

1. Combine Thai redcurry paste, shredded basil, finely chopped red chillies, lemon juice, 1 tablespoon oil, brown sugar and salt into a bowl and mix well. Add fish cubes and prawns and mix well. Set aside to marinate for 30 minutes.
2. Insert fish and prawns in satay sticks and repeat the procedure till all the ingredients are used.
3. Heat remaining oil in a non-stick pan.
4. Sprinkle coconut over the prepared satays and cook in hot oil till evenly done.
5. Place carrot and bell pepper in the centre of serving plate. Place prepared satays on the sides and serve hot.

Preparation Time:30-40 minutes
Cooking Time: 5-8 minutes
