Seekh Kabab | Sanjeev Kapoor Khazana

These simple mixed vegetable seekh kebabs served with green chutney are the perfect finger food to serve for a family gathering or party.

SEEKH KABAB - (Serves - 4)

Ingredients

2 medium potatoes, boiled, peeled and mashed
½ cup green peas, boiled and mashed
½ cup grated cottage cheese
1 small carrot, finely chopped
5-6 French beans, finely chopped
2 tablespoons roasted gram flour
1 tablespoon ginger-garlic paste
½ teaspoon dried mango powder (amchur)
1 teaspoon chaat masala
Salt to taste
Juice of ½ lemon
1 teaspoon oil + for greasing
Green chutney as required
Fresh mint sprig for garnishing
Onion rings for serving
Lemon wedge for serving

Method

1. Mix together potatoes, green peas, cottage cheese carrot, French beans, gram flour, ginger-garlic paste, dried mango powder, chaat masala, salt and lemon juice in a bowl.
2. To prepare kababs, grease your palms with some oil, divide the mixture into equal portions and wrap each portion around two satay sticks.
3. Heat 1 teaspoon oil on a non-stick tawa. Place the kababs and sear from all sides till golden brown.
4. Discard the satay sticks from the kababs and halve diagonally.
5. Put some green chutney on one side of a serving platter and spread using the back of the spoon.
6. Place the halved kababs, garnish with a mint sprig and serve hot with onion rings and a lemon wedge.
