These simple mixed vegetable seekh kebabs served with green chutney are the perfect finger food to serve for a family gathering or party. SEEKH KABAB - (Serves - 4)Ingredients2 medium potatoes, boiled, peeled and mashed½ cup green peas, boiled and mashed½ cup grated cottage cheese1 small carrot, finely chopped5-6 French beans, finely chopped2 tablespoons roasted gram flour 1 tablespoon ginger-garlic paste½ teaspoon dried mango powder (amchur)1 teaspoon chaat masalaSalt to tasteJuice of ½ lemon 1 teaspoon oil + for greasingGreen chutney as requiredFresh mint sprig for garnishingOnion rings for servingLemon wedge for servingMethod1. Mix together potatoes, green peas, cottage cheese carrot, French beans, gram flour, ginger-garlic paste, dried mango powder, chaat masala, salt and lemon juice in a bowl.2. To prepare kababs, grease your palms with some oil, divide the mixture into equal portions and wrap each portion around two satay sticks.3. Heat 1 teaspoon oil on a non-stick tawa. Place the kababs and sear from all sides till golden brown. 4. Discard the satay sticks from the kababs and halve diagonally. 5. Put some green chutney on one side of a serving platter and spread using the back of the spoon. 6.
