Sensational Beef Lo Mein With Green Veggies Recipe | Glen And Friends Cooking

Sensational Beef Lo Mein Recipe... Sometimes called 888 Beef Chow Mein Recipe... The difference is subtle; are the noodles tossed or fried? These seem to be both, and many restaurants we've been to can't decide either. So here you have our version:

Ingredients:
250g (8 oz.) dry lo mein / chow mein noodles
30 mL (2 Tbsp) soy sauce
5 mL (1 tsp) baking soda
2 mL (½ tsp) red-pepper flakes
1 thumb sized piece of ginger, grated
500g (1 pound) flank steak
2 carrots, sliced 'Julienne'
3 green onions, thinly sliced
Handful of asparagus, cut into bite sized pieces
250 mL (1 cup) edamame
30 mL (2 Tbsp) soy sauce
10 - 15 mL (2 to 3 tsp) toasted sesame oil
15 mL (1 Tbsp) garlic chili paste
60 mL (4 Tbsp) canola or grapeseed oil


Method:
Cook noodles according to package instructions. 
Drain and keep warm.
In a medium bowl mix together the marinade: soy sauce, baking soda, red pepper flakes, and ginger.
Thinly slice the steak across the grain and add to the marinade mix.
Toss to coat and set aside while you prep the rest of the ingredients.
Prep the vegetables.
In a small bowl mix together the sauce: soy sauce, sesame oil, and garlic chilli paste.
Cook noodles according to package instructions. 
Drain and keep warm.
Heat 2 Tbsp of oil in a large wok until hot and shimmering.
Add the beef, half at a time and cook until crisp on the outside but still pink inside.
Hold the cooked beef in a bowl.
Add remaining oil to the wok and heat until shimmering.
Add the carrots and cook, tossing until tender crisp.
Add the white part of the green onions, asparagus, and edamame.
Toss and heat through.
Add the beef, noodles, and sauce mixture to the wok, and toss over medium high heat until coated and the sauce has thickened a little.
Sprinkle with the green parts of the onion.
