SEV NI KADHI

Ingredients

1 cup + 2 tablespoons gram flour
1 cup yogurt
Salt to taste
1½ teaspoons red chilli powder
½ teaspoon turmeric powder
1 teaspoon coriander powder
1 teaspoon cumin powder
2-3 teaspoons + 1 tablespoon oil
1 tablespoon chopped fresh coriander leaves
1 teaspoon cumin seeds
4-5 cloves
3-4 red button chillies (boria mirch)
7-8 curry leaves

Method

1. Combine 1 cup gram flour, salt, ½ teaspoon chilli powder, ¼ teaspoon turmeric powder, ½ teaspoon coriander powder, ½ teaspoon cumin powder and 2-3 teaspoons oil in a bowl. Add ½ cup water, mix and knead into a soft dough.
2. Transfer the dough into a sev press, cover and set aside.
3. Take yogurt in a deep non-stick pan. Add 3 cups water and whisk well.
4. Place the pan on heat. Add salt, mix well and let it heat. Add 2 tablespoons gram flour and blend well.
5. Add remaining turmeric powder, ½ teaspoon chilli powder, remaining cumin powder, remaining coriander powder and mix well. Cook till the mixture comes to a boil.
6. Press the sev press into the pan to get sev. Mix lightly and cook till the sev is fully cooked and kadhi thickens.
7. Add chopped coriander and mix well. Transfer the kadhi into a serving bowl.
8. Heat 1 tablespoon oil in a tempering pan. Add cumin seeds and let the seeds change colour. Add cloves, red button chillies, curry leaves and remaining chilli powder and mix well.
9. Pour the tempering over the kadhi and serve hot.

Cooking Time: 15-18 minutes
