Ghee½ tsp. Mustard seeds1 tbsp. Ginger-Garlic-Green Chilli, crushed½ tsp. Cumin seeds1 generous pinch of Asafoetida¼ tsp. Turmeric powder ½ tsp. Red Chilli powder1 tbsp. Coriander powder1 tsp. Sugar/ Jaggery½ cup waterCoriander leaves for garnishSalt as requiredMethod:-- Heat oil and ghee in a wok.- Add mustard seeds, cumin seeds, crushed ginger-garlic-green chilli and a generous pinch of asafoetida.- Stir and add in chopped tomatoes, salt and let it stew on low flame for 12-15 minutes.- Then add turmeric powder, red chilli powder, coriander powder, jaggery and water.- Cover this and cook it on low flame for 3 minutes.- Then add the sev/gathiya and turn the flame off.- Garnish with coriander leaves and Sev Tamatar Ki Sabzi is ready.Kathiyawadi Sev Tomato Sabzi is ready to serve!
