Shahi White Biryani
Serves 6-8
Recipe in English:

Ingredients:
-Cooking oil 1 tbs
-Pyaz (Onion) sliced 2 medium
-Hari mirch (Green chillies) 4-5
-Hara dhania (Fresh coriander) 1-2 tbs
-Podina (Mint leaves) 1-2 tbs
-Chicken 750g
-Lemon juice 1 & tbs
-Adrak lehsan paste (Ginger garlic paste) 1 & tbs
-Namak (Salt) 1 tsp or to taste
-Kali mirch powder (Black pepper powder) 1 tsp
-Kaju (Cashew nuts) 10-12 (soaked)
-Badam (Almonds) 10-12 (soaked)
-Pani (Water) 1-2 tbs
-Cooking oil 6-8 tbs
-Zeera (Cumin seeds) 1 tbs
-Badi elaichi (Black cardamom) 1
-Hari elaichi (Green cardamom) 3
-Sabut kali mirch (Black pepper corns) 6-7
-Badiyan ka phool (Star anise) 1
-Darchini (Cinnamon stick) 1
-Tez paat (Bay leaves) 2
-Dahi (Yogurt) whisked 1 Cup (room temperature)
-White korma masala 2 tbs
-Jaifil powder (Nutmeg powder) 1/4 tsp
-Javatri powder (Mace powder) 1/4 tsp
-Kasuri meethi (Dried fenugreek leaves) tbs
-Cream Cup (room temperature)
-Garam masala powder 1 tsp
-Chawal (Rice) 750g (soaked & boiled with salt until 3/4th done)
-Pyaz (Onion) fried
-White korma masala tbs

Directions:
-In wok,add cooking oil,onion,green chillies,fresh coriander,mint leaves and fry until light golden & let it cool.
-In grinder,add onion & green chilli mixture,grind well & set aside.
-In bowl,add chicken,lemon juice,ginger garlic paste,salt,black pepper powder and mix well,cover and marinate for 30 minutes.
-In grinder,add cashew nuts,almonds,water,grind well & set aside.
-In wok,add cooking oil,cumin seeds,black cardamom,green cardamom,black peppercorns,star anise, cinnamon stick,bay leaves and mix well.
-Add grinded onion & green chilli mixture,mix well and cook for 2-3 minutes.
-Add yogurt and mix well.
-Add white korma masala,nutmeg powder,mace powder and mix well.
-Add cashew & almond paste and mix well.
-Now add marinated chicken and mix well,cover and cook on low flame for 8-10 minutes then cook on high flame until oil separates.
-Add dried fenugreek leaves,cream and mix well.
-Add garam masala powder,mix well & set aside.
-In pot,add half quantity of boiled rice,prepared chicken korma,fried onion,remaining boiled rice,white korma masala,cover and steam cook on low flame for 8-10 minutes & serve!

-Karhai mein cooking oil,pyaz,hari mirch,hara dhania aur podina dal ker light golden hunay tak fry ker lein aur thanda ker lein.
-Grinder mein pyaz & hari mirch mixture dal ker ache tarhan grind ker lein & side per rakh dein.
-Bowl mein chicken,lemon juice,adrak lehsan paste,namak aur kali mirch powder dal ker ache tarhan mix karein aur dhak ker 30 minutes kliya marinate ker lein.
-Grinder mein kaju,badam aur pani dal ker ache tarhan grind ker lein & side per rakh dein.
-Karhai mein cooking oil,zeera,badi elaichi,hari elaichi,sabut kali mirch,badiyan ka phool,darchini aur tez paat dal ker ache tarhan mix ker lein.
-Grinded pyaz & hari mirch mixture dal ker ache tarhan mix karein aur 2-3 minutes kliya paka lein.
-Dahi dal ker ache tarhan mix karein.
-White korma masala,jaifil powder aur javatri powder dal ker ache tarhan mix ker lein.
-Kaju & badam paste dal ker ache tarhan mix karein.
-Ab marinated chicken dal ker ache tarhan mix karein aur dhak ker halki ancch per 8-10 minutes kliya paka lein phir tez ancch per oil alag hunay tak paka lein.
-Kasuri meethi aur cream dal ker ache tarhan mix ker lein.
-Garam masala powder dal ker ache tarhan mix karein & side per rakh dein.
-Pot mein boiled chawal ki half quantity,tayyar chicken korma,fried pyaz,remaining boiled chawal aur white korma masala dal ker dhak dein aur halki ancch per 8-10 minutes kliya steam cook ker lein & serve karein!
