A twist to the regular puran polis where the stuffing is made with jaggery and sweet potatoes.

SHAKARKAND PURAN POLI

Ingredients

500 grams sweets potatoes
1 ½ cup whole wheat flour (atta)
Pinch of salt
2 tsps white sesame seeds
1 tbsp + 2 tsp ghee + for drizzling
¼ cup milk
¾ cup chopped jaggery
Pinch of green cardamom powder
Milk to serve

Method

1. Take 500 grams sweet potato and cut into thick roundels. Put it into pressure cooker, add1 ½ cups water .cover the lid and cook under pressure for 2-3 whistles on a medium heat.
2. Take 1½ cupswhole wheat flour, add pinch of salt, 2 tsps white sesame seeds, 1 tbsp ghee and mix. Add ¼ cup milk, ¼ cup water or else required and knead into soft dough in a large plate.
3. Drizzle 2 tsps ghee knead again and cover with damp muslin cloth and set aside.
4. Open the cooker once the pressure has reduced completely and drain the sweet potatoes and allow cooling slightly.
5. Peel the skin of boiled sweet potatoes and mash with the fork
6. To make stuffing, heat a non-stick pan, add ¾ cup chopped jaggery, ¼ cup water and mix and cook till syrup reaches one spring consistency. Add sweet potatoes and mix well.
7. Add pinch of green cardamom powder and mix, add 2 tsps ghee and mix well. Transfer the mixture in a plate and allow to cool on a room temperature.
8. Divide the dough into equal portion and shape it into small balls
9. Dust whole wheat flour on work top and gently press and roll out into small discs and place spoonful of mixture in a centre , seal the edges and roll into thick round discs or poli.
10. Heat a non-stick tawa. place the discs and cook from both the side , drizzle from both the side and cook for a minute.
11. Drizzle ghee on top and serve hot with milk.
