One of my childhood memories is eating these Phodnichi Poli made with leftover chapati. Here is mom making them - simple, delicious, and the best breakfast ever! Here is her recipe: Break 4 to 5 Rotis into bite-sized pieces. Add to blender and pulse a few times In a pan heat oil and make tadka with mustard seeds and cumin seeds. Add hing, turmeric, green chilies, and curry leaves Add peanuts and roast them in the oil for 2 to 3 minutes Add finely diced onions and salt and saute until translucent Stir in diced tomatoes and cook until they are soft. Add the roti pieces and mix well. Sprinkle a few spoons of water and cook covered. Garnish with 1 teaspoon of sugar, lime juice, and cilantro. Mix well and enjoy hot with Garam Garam Chai!
