Shrimp Burger Prawn Burger Sanjeev Kapoor Khazana

A wonderful shrimp patty burger flavoured with Oriental seasonings, tartar sauce and cheese is a superb snack.

SHRIMP BURGER

Ingredients

250 grams shrimps, cleaned, peeled, and deveined
4 burger buns, halved
Salt to taste
Crushed black peppercorns to taste
2-3 tbsps chopped spring onion greens
1 tsp light soy sauce
2 spring onion bulbs
1 tbsp refined flour (maida)
2 eggs, beaten
Panko breadcrumbs for coating
Oil for shallow frying
Butter for applying
Lettuce leaves as required
Tartar sauce as required
4 cheese slices
1 small tomato, cut into thin roundels
Assorted chips to serve

Method

1. Put the shrimps in a food processor jar, add shrimps, salt, crushed black peppercorns, spring onion greens and process to a coarse mixture.
2. Transfer the mixture into a large bowl; add light soy sauce, spring onion bulbs and refined flour and mix well till combined.
3. Dip your palm in water and divide the mixture into equal portions and shape each portion it into a patty.
4. Dip each patty in eggs mixture and coat with panko breadcrumbs on both sides.
1. Heat a non-stick pan, toast the burger buns till golden brown and lightly crisp. Flip them and toast the other side for 30 seconds. Transfer on a worktop.
5. Heat sufficient oil in the same pan, place the patties and shallow fry till golden brown and crisp. Drain on an absorbent paper.
6. To make one burger, apply some butter on the base half of the burger bun, place a few lettuce leaves, spread a portion of tartar sauce over it, place a fried patty, top it up with a cheese slice, place a few tomato roundels and apply some butter on the base of the remaining burger bun half. Place it over the burger with the butter side facing down. Arrange the burger on a serving plate and serve with assorted chips.
