Caprese Salad:
Ingredients:

2 large ripe tomatoes
1/2 pound fresh mozzarella cheese, sliced
1/4 cup fresh basil leaves, torn
2 tablespoons extra-virgin olive oil
1 tablespoon balsamic vinegar
Salt and pepper, to taste
Directions:

Slice the tomatoes and mozzarella cheese into 1/4-inch thick slices.
Arrange the tomato and mozzarella slices on a serving platter, alternating them.
Sprinkle the torn basil leaves over the tomato and mozzarella slices.
Drizzle the extra-virgin olive oil and balsamic vinegar over the salad.
Season with salt and pepper, to taste.
Caprese Sandwich:
Ingredients:

4 slices of Italian bread
8 slices of fresh mozzarella cheese
2 ripe tomatoes, sliced
1/4 cup fresh basil leaves
2 tablespoons extra-virgin olive oil
Salt and pepper, to taste
Directions:

Toast the bread slices in a toaster or under a broiler until lightly golden brown.
Layer the fresh mozzarella cheese slices on two of the toasted bread slices.
Top the mozzarella with the sliced tomatoes and fresh basil leaves.
Drizzle the extra-virgin olive oil over the top of the sandwich.
Season with salt and pepper, to taste.
Top each sandwich with the remaining two slices of toasted bread.
