SITAPHAL AUR CHAWAL KI KHEER

Ingredients

2 custard apples (sitaphal)
½ cup short grain rice (chawal), washed and soaked for 20 minutes
5 cups full fat milk
A large pinch of saffron
10-12 pistachios
8-10 almonds
6-7 cashewnuts
½ cup sugar
½ tsp green cardamom powder

Method

1. Remove pulp from custard apple. Chop pistachios, chop the almonds and the cashewnuts.
2. Strain the rice and add it to a blender jar. Add ½ cup water and blend it to a fine paste.
3. Boil milk in a deep non-stick pan. Add saffron and rice paste to the milk, mix and cook till the rice is cooked completely.
4. Add sugar and green cardamom powder, mix and cook till the sugar melts. Add custard apple pulp and mix well.
5. Add ¾ of the chopped nuts, mix and cook for a minute. Switch the heat off and serve hot garnished with reserved nuts.
