Smoked Brinjal ki Salan with Ragi Sankati -Cooked Finger millet Meal | Vahchef - VahRehVah

SMOKED BRINJAL KA SALAN WITH RAGI SANKATI
INGREDIENTS
Oil - As Required
Onion - 2 no
Coconut - 1 no
Red chilli powder - 1 tsp
Cumin powder - ½ tsp
Turmeric powder - ½ tsp
Coriander powder - 1 tsp
Peanuts - 100gms
Sesame seeds - 50gms
Ginger - 1 pieces
Cinnamon stick - 2 nos.
Cardamom - 2 nos
Bay leaf - 1 no
Water - As Required
Eggplant - 250gms
Mustard seeds - 1 tsp
Cumin seeds - 1 tsp
Methi seeds - ½ tsp
Redchillies - 4 nos
Curry leaves - 2 spring
Hing - 1 tsp
Red chilli powder - 1 tsp
Curd - 1 cup
Tamarind juice - 1 cup
Tomatoes - 3 nos
Green chillies - 6 nos
Water - As Required
Jagger powder - a pinch
Coriander leaves - 1 bunch
Ghee - 3 tsp
DIRECTIONS:
Firstly, burn the onions, and coconut pieces on direct flame by using a grill and make into a smooth paste. Now dry roast peanuts, sesame seeds in a pan and put it in a blender and add ginger, garlic, cinnamon, cloves, cardamom, bayleaf add some water and make it into a fine paste.
Heat oil in another pan, add egg plants and let it cook with the lid closed on slow flame. Transfer it into a plate.
In the same pan, add mustard seeds, cumin seeds, fenugreek seeds, red chillies and add coconut paste, curry leaves, hing and cook it till the oil oozes out the gravy.
Then add red chilli powder, curd, tamarind juice, tomatoes, green chillies, water cook it for few minutes by adding water.
Now add fried Egg plants, salt, jaggery powder, coriander leaves till the oil oozes out of the gravy.
To get that nice Smoky flavor, take a charcoal heat it on a direct flame and add a spoon of ghee to it and place that bowl in between of the gravy and smoke it up for few minutes.
Delicious smoked Brinjal ka salan ready to serve with ragi sankati.
