Smoked Chicken With Citrus Salad | Sanjeev Kapoor Khazana

A simple way to infuse that fabulous smoky flavour in your food. Try this smoked chicken and citrus salad recipe.

SMOKED CHICKEN WITH CITRUS SALAD - (Serves - 4)

Ingredients

4 boneless chicken breasts
3-4 pomelo segments, sliced
2 medium oranges, segments separated
2 tablespoons chopped garlic
Salt to taste
Crushed black peppercorns to taste
2 teaspoons red chilli flakes
2 tablespoons + ΒΌ cup olive oil + as required
1 teaspoon mustard paste
1 tablespoon maple syrup vinaigrette
1 tablespoon lemon juice
18-20 fresh arugula leaves
1 tablespoon pine nuts
1-2 tablespoons feta cheese
Fresh coriander sprigs for garnishing

Method

1. Heat a coal directly on flames and place in a small steel bowl.
2. Take chicken breasts in a bowl. Add garlic, salt, crushed peppercorns, chilli flakes, 1 tablespoon olive oil and mustard paste and mix well.
3. Place the steel bowl on one side of the bowl and add 1 tablespoon olive oil in to create smoke. Cover the entire bowl with aluminum foil and keep for 3-4 minutes.
4. To prepare dressing, combine maple syrup vinaigrette, lemon juice, salt and crushed peppercorns in another bowl and whisk. Add remaining olive oil gradually and whisk well.
5. Heat an electric griller and grease with some olive oil. Place the marinated chicken breasts and grill from all sides basting with some olive oil till golden and cooked. Transfer on a plate.
6. Place few arugula leaves on one side of individual serving platter. Place few pomelo slices, orange segments, pine nuts and feta cheese on top.
7. Place grilled chicken breasts on the other side. Drizzle some dressing, sprinkle some crushed peppercorns and garnish with few coriander sprigs on top of fruit mixture.
8. Serve immediately.
