S'Mores Ice Cream | Sanjeev Kapoor Khazana

Combination of biscuit, marshmallows and cream made into ice cream. A must try recipe !

SMORE’S ICE CREAM

Ingredients

10-15 digestive biscuits
8-10 marshmallows, chopped
1 cup milk
2 cups fresh cream
1 teaspoon vanilla essence
⅔ cup castor sugar
3 egg yolks

Method

1. Heat milk in a non-stick pan. Add cream and bring to boil. Add vanilla essence and castor sugar and whisk till castor sugar melts.
2. Take egg yolk mixture in a bowl. Add ¼ of milk-cream and mix well. Add the mixture to remaining milk-cream mixture and cook till the mixture thickens, stirring continuously.
3. Strain the mixture in another bowl and refrigerate for 3-4 hours.
4. Blend the milk-cream mixture.
5. Fill a silicon bowl with some milk-cream mixture. Crush biscuits and put on top of milk-cream mixture and put few marshmallows pieces. Repeat the process till the ingredients are used. Cover and freeze for 8-10 hours
6. Scoop out and serve immediately.
