For the caramel:
Cook 6 strips of bacon on medium until semi crispy, take out bacon and strain oil in to a bowl.
Heat 1 Cup of sugar in a saucepan (use a decent sized one as it will foam up). Whisk while the sugar melts, then when the sugar finally melts stop stirring and let it come to a boil. The second it starts to boil pour in the bacon grease while whisking quickly, immediately take off the heat and pour in 1/4 cup of cream, whisking quickly and bazing! you have your bacon caramel. Use butter instead of bacon grease (about 6 tablespoons) if you are not in to the whole bacon thing (but you should be)
