INGREDIENTS
1. Grated Bottle gourd - 1 Cup
2. Sugar - 1/2 Cup
3. Clarified Butter (Ghee) - 1/4 Cup
4. Cashew nuts
5. Raisins
6. Cardamom Powder

Bottle gourd needs to be grated first. Drain off the water from it by squeezing.

Heat 2 teaspoons clarified butter (ghee) in a pan. Add chopped cashew nuts and fry. After it changes colour, add raisins and fry. Move it into a different bowl. Heat 2 teaspoons clarified butter (ghee) in the same pan. Fry grated bottle gourd for 10 to 15 minutes. Fry till the raw smell from the bottle gourd goes away. Add 1/2 cup sugar and fry. Fry till sugar melts and the mixture thickens. Close the lid and fry. After the water boils away and the mixture thickens, add cardamom powder. Add 2 teaspoons clarified butter (ghee) and mix. Garnish with cashew nuts and raisins.
