Game day meatballs for your Super Bowl party! This Tex-Mex Southwest chipotle meatball recipe is what you should be cooking for any get together where you need a meatball recipe that your guests will rave about!Ingredients:750g (1½ pounds) ground beef100g grated cheddar cheese30 mL (2 Tbsp) Cilantro, plus more for garnish2 cloves garlic, minced5 mL (1 tsp) ground cumin5 mL (1 tsp) chipotle chill powder1 jalapeño, minced1 large eggCoarse salt and pepper to taste15 mL (1 Tbsp) oil1 onion, chopped1-2 jalapeño, sliced16 oz. crushed tomatoes30 mL (2 Tbsp) chopped chipotle peppers in adobo sauceMethod:Combine ground beef, cumin, chipotle chill powder, jalapeño, cilantro, cheese, egg, and garlic. Season with salt and pepper. Mix, and divide into meatballs. Heat oil in a large pan over medium-high heat. Add meatballs and brown on all sides. Remove the meatballs and add the onions and sliced jalapeños and cook until softened. Add tomatoes and chipotle peppers and season with salt and pepper. Stir together and simmer until the flavour develops. Reduce heat to low and add meatballs tossing in the sauce. Cover and cook until meatballs are heated through.
