Ingredients:
• 1 cup Soya Chunks
• 1 cup Curd
• 1 capsicum, cubed
• 1 onion, cubed
• 1 carrot, cubed
• 1 small potato, cubed
• 1 ½ tsp tsp Biryani Masala
• 1 tsp Ginger Garlic Paste
• Salt to taste
• 1 tsp Red Chilli Powder
• 3-4 tsp Oil
• 3-4 tbs Ghee
• 1 Bay Leaf
• 1 tsp Cumin
• 2 Cardamom
• 1-2 Star Anise
• 1 Cinnamon
• 1 Onion, finely chopped
• ¼ tsp Turmeric
• 1 tsp Cumin
• 1 cup Basmati Rice, soaked
• 1 cup Coconut Milk + 1 cup Water
• 3 tbsp Fried Brown Onions
• 3 tbsp Coriander & Mint, chopped
• Raita to garnish

Method :
1.in a mixing bowl, take soya chunks, curd, capsicum, onion, carrot and potato cubes and mix it. Add 1 tsp biryani masala, 1/2 tsp ginger garlic paste, salt, red chilli powder, give it a good mix and let it marinate for 10-15 minutes.
2. Heat 2 tsp Oil and 1 tsp Ghee. Saute the entire whole spices till aromatic.
3. Add chopped onion, let it cook for nicely. Then add 1/2 tsp ginger-garlic paste, red chilli powder, turmeric, cumin powder and saute for 2 mins. Add some water to avoid burning of spices. Add soaked rice and sauté.
4. Now add a spoonful of ghee in the pressure cooker. Place the marinated soya and vegetables evenly.
5. Add rice layer and spread evenly over marinated soya. Pour the mixture of 1 cup of water and 1 cup coconut milk. Add salt to taste and gently mix it.
6. Cover and pressure-cook for 2 whistles. Remove from the pressure cooker and take it on a serving plate. Garnish with some fried onion and coriander. Serve warm with raita.
