Soya Biryani #biryani #vegbiryani #soyabiryaniIngredients:• 1 cup Soya Chunks • 1 cup Curd • 1 capsicum, cubed• 1 onion, cubed• 1 carrot, cubed• 1 small potato, cubed• 1 ½ tsp tsp Biryani Masala • 1 tsp Ginger Garlic Paste• Salt to taste• 1 tsp Red Chilli Powder• 3-4 tsp Oil• 3-4 tbs Ghee• 1 Bay Leaf• 1 tsp Cumin• 2 Cardamom• 1-2 Star Anise• 1 Cinnamon• 1 Onion, finely chopped• ¼ tsp Turmeric • 1 tsp Cumin• 1 cup Basmati Rice, soaked• 1 cup Coconut Milk + 1 cup Water• 3 tbsp Fried Brown Onions • 3 tbsp Coriander & Mint, chopped • Raita to garnishMethod :1.in a mixing bowl, take soya chunks, curd, capsicum, onion, carrot and potato cubes and mix it. Add 1 tsp biryani masala, 1/2 tsp ginger garlic paste, salt, red chilli powder, give it a good mix and let it marinate for 10-15 minutes. 2. Heat 2 tsp Oil and 1 tsp Ghee. Saute the entire whole spices till aromatic. 3. Add chopped onion, let it cook for nicely. Then add 1/2 tsp ginger-garlic paste, red chilli powder, turmeric, cumin powder and saute for 2 mins. Add some water to avoid burning of spices. Add soaked rice and sauté.4. Now add a spoonful of ghee in the pressure cooker. Place the marinated soya and vegetables evenly. 5. Add rice layer and spread evenly over marinated soya. Pour the mixture of 1 cup of water and 1 cup coconut milk. Add salt to taste and gently mix it.6. Cover and pressure-cook for 2 whistles. Remove from the pressure cooker and take it on a serving plate. Garnish with some fried onion and coriander.
