A quick and wholesome pulao made with the power-packed soya chunks to sort your lunch or dinner worries.

SOYA CHUNKS PULAO

Ingredients

1 cup soya chunks, soaked in warm water and drained
1½ cups rice, soaked and drained
1 tbsp ghee
½ tsp caraway seeds
3 green cardamoms
2-3 cloves
½ inch cinnamon
1 medium onion, sliced
1 tbsp ginger-garlic paste
1-2 green chillies, diagonally sliced
Salt to taste
1 medium tomato, finely chopped
6-8 fresh coriander sprigs
¼ tsp turmeric powder

Method

1. Heat 3 cups water in a deep non-stick pan.
2. Heat ghee in another deep non-stick pan. Add caraway seeds, cardamoms, cloves and cinnamon and sauté till fragrant.
3. Add onion and sauté till translucent. Add ginger-garlic paste and green chillies and sauté for 30 seconds.
4. Add soya chunks and mix. Add salt and tomato, mix, cover and cook for 1-2 minutes or till tomato turns soft and pulpy.
5. Finely chop coriander sprigs, add to pan along with turmeric powder, mix and cook for 1 minute.
6. Add rice and mix. Add hot water, mix, cover and cook on medium heat till rice is done. Remove from heat and set aside for 10 minutes.
7. Serve hot.
