Vegetarian version of galouti kababs by using soya granules. A must try !SOYA KI GALOUTIIngredients2 cups soya granules, soaked in warm water for 30-45 minutes3 tablespoons ghee + to shallow fry1 tablespoon ginger paste½ tablespoon garlic paste3 tablespoons gram flour (besan)2 teaspoons garam masala powder1 teaspoon red chilli powder ½ teaspoon mace (javitri) powder1 teaspoon green cardamom powderSalt to taste½ cup browned onion pasteA few saffron strands, soaked in water 1 teaspoon kewra waterCurd onions rings to serveMethod1. Place soya granules in a strainer and drain excess water. Transfer into a bowl. 2. Add 3-4 tablespoons of water to ginger-garlic paste and mix well.3. Heat 3 tablespoons ghee in a non-stick pan. Add ginger-garlic paste and sauté on low heat for 2-3 minutes. Add gram flour and sauté till fragrant.4. Add drained soya granules and sauté for 4-5 minutes. Add garam masala powder, red chilli powder, mace powder, green cardamom powder and salt and mix well. Cook for 4-5 minutes.5. Transfer soya mixture on a plate and allow to cool.6. Grind the soya mixture along with browned onion paste to a smooth paste and transfer into a bowl. Add saffron and kewra water and mix well. 7. Divide the mixture into 8 equal portions and shape into tikkis.8. Heat ghee in a shallow non-stick pan and place the tikkis in it. Shallow-fry on medium heat, turning sides, till golden brown on both sides. Drain on absorbent paper.9.
