SOYA LACHCHA PARANTHA

Ingredients

1 cup whole wheat flour + for dusting
½ cup soya bean flour
½ tsp turmeric powder
½ tsp red chilli powder
1 tsp coriander powder
1 tsp Tata Sampann Garam Masala Powder
1½ tsps chaat masala
Salt to taste
1 tbsp ghee + for applying + for drizzling
½ tsp red chilli powder
Sabzi to serve
Onion rings to serve
Lemon wedges to serve

Method

1. In a parat, add whole wheat flour, soya bean flour, turmeric powder, red chilli powder, coriander powder and Tata Sampann Garam Masala Powder,½ tsp chaat masala and salt. Add 1 tbsp ghee and mix well, add water and knead to a soft dough.
2. Add remaining ghee to the dough and knead till well combined, set aside for 10-15 minutes.
3. To make the spice mix, chaat masala, red chilli powder and salt and mix well, set aside.
4. Divide the dough into equal portions and shape them into balls. To make the parantha, take a dough ball and roll it into a thin disc, brush ghee and sprinkle whole wheat flour and start pleating from one end to the other and twist into a round chakri.
5. Dust the worktop with a little whole wheat flour and roll the prepared chakris and into a parantha.
6. Heat a non-stick tawa, place the prepared parantha on it and cook for 1 minute on each side, drizzle ghee and cook further for 1 minute on both sides. Take it off the heat and place it on a worktop.
7. Crush the parantha while it is hot and sprinkle with prepared spice mix and serve hot with Sabzi, onion rings and lemon wedges.
