A delicious and high protein snack that comes in small bites with full of flavours and spice! Great to carry when you are traveling or just want to munch on to something tasty.

SOYA PROTEIN BITES

Ingredients

1½ cups soya mini chunks
2 tbsps peri peri masala
1 tbsp dried mixed herbs
Salt to taste
2 tsps Kashmiri red chilli powder
2 tbsps olive oil
½ lemon

Method

1. Take soya chunks in a large bowl, soak in hot water and set aside for 10-15 minutes.
2. To make spice mix, put peri peri masala in a jar. Add dried mixed herbs, salt, Kashmiri red chilli powder and mix well.
3. Preheat the oven at 160˚C.
4. Squeeze the soya chunks to remove the excess water and arrange them on a baking tray.
5. Drizzle olive oil on the soya chunks and rub well. Sprinkle 1½ tbsps spice mix and squeeze juice of lemon and mix. Keep the baking tray in the oven and bake for 20-25 minutes.
6. Take the baking tray out of the oven and allow to cool to room temperature. Transfer into a serving bowl and serve.
