Learn how to make Spanish Gazpacho, a delicious and appetizing homemade cold soup.

Gazpacho is cool, refreshing and flavorful start to a meal on a hot summer day. This tomato-based soup originates in the southern Spanish region of Andalusia. Food blogger Tarika Singh is up with her recipe of this refreshing Gazpacho to zap away your summer heat.

Ingredients:

55 gms. of slightly stale bread (about a day old)
450 gms. of ripe tomatoes
2 cloves garlic, peeled & finely chopped
1 green chilli pepper, chopped (plus extra for garnish)
1/4 teaspoon cumin powder
1 tsp. sea salt
3 tbsp. extra virgin olive oil
1 tbsp. red wine vinegar
3/4 cup cold water (optional)
3 tbsp. chopped onion (for garnish)

Method:

- In a bowl, add water and soak the stale bread in it for about 5 minutes.
- After 5 minutes, squeeze the water from the bread and keep it aside.
- Chop the tomatoes to make the tomato puree.
- Drain the tomato puree using a mesh strainer.
- In the bowl of the food processor, place the bread pieces along with 1/3 cup of tomato puree and 2 cloves of minced garlic and blend it to get a smooth texture.
- After blending, add the rest of the tomato puree, green chilli pepper, cumin powder and sea salt and blend it all together again.
- While blending, with the food processor running, gently pour in the extra virgin olive oil followed by the red wine vinegar through the feeder tube.
- Give it a taste & adjust any flavours you might like.
- Chill the soup in the refrigerator until you are ready to serve.
- Garnish the soup with freshly chopped tomatoes, onions, cucumber and green chilli pepper.
