Special Kashmiri Shahi Dum Aloo Recipe With @DelMonteIndia Pomace Oil

A dish from the traditional Kashmiri Pundit cuisine, Dum Alu Kashmiri is my all- time favourite. Though it looks exotic but it is rather easy to make.This yogurt- based gravy preparation is quite different from the hot & spicy North Indian dum alu & yogurt based Banarsi dum alu preparations. It is more vibrant, visually impressive and rich in flavour. Try this out and enjoy this dish with your family. Do not forget to write in the comment section if you like it.

Ingredients :

4 half boiled potatoes
7/8 Cashew nuts
1 chopped green chilli
1 tsp ginger paste
cup grated paneer
7/8 Raisins
tsp turmeric powder,
tsp coriander powder
tsp cumin powder
tsp red chilli powder
Salt to taste
10 tbs Del Monte olive pomace oil

Method :

Step 1 : Cut the boiled potatoes into halves and scoop out from the middle to stuff filling
Step 2 : Fine chop the cashew nuts
Step 3 : Chop the scooped-out potatoes
Step 4 : Take 2 Table spoon olive pomace oil in a pan & when oil is hot add the scooped-out potatoes
Step 5 : Stir for a while & add chopped green chilli & ginger paste and mix well
Step 6 : Add cup grated paneer & the chopped cashews & raisins
Step 7 : Add salt to taste and mix well
Step 8 : Add tea spoon turmeric powder, tea spoon coriander powder, tea spoon cumin powder & tea spoon red chilli powder & mix well
Step 9 : Keep the stuffing aside
Step 10 : Take about 6 to 8 table spoon olive pomace oil in the same pan
Step 11 : When the oil is hot add the potatoes coated with little saalt, turmeric powder & Kashmiri red chilli powder and fry them
Step 12 : Stuff the fried potatoes with the filling

*For the gravy*

Ingredients :
2 table spoon olive pomace oil
2 small tomatoes chopped
1 green chilli chopped
5/6 soaked cashew nuts
1 tea spoon grated ginger
cup curd
Bay leaf
inch Cinnamon stick
5/6 cloves
2 cardamoms
tea spoon garam masala powder
Chopped coriander leaves
1 tea spoon Cream
Water
Salt

Method :
Step 1 : In a mixer jar take 2 small tomatoes chopped grated ginger, green chilli chopped, soaked cashew nuts, curd and little water and grind to a fine paste.
Step 2 : In a pan take olive pomace oil and when hot add bay leaf, cardamom and cloves
Step 3 : Add the paste and mix well
Step 4 : Add turmeric powder, cumin powder, coriander powder, red chilli powder & mix well6.
Step 5 : Add Salt to taste & garam masala powder
Step 6 : Place the stuffed potatoes gently in the gravy cook on low heat till the potatoes are cooked
Step 7 : Garnish with a few chopped coriander leaves & sprinkle a few drops of cream on top
