Spiced and Spiked Hot Chocolate Sanjeev Kapoor Khazana

How about adding a little rum and spice to hot chocolate? Makes chilly winters really warm, na?

SPICED AND SPIKED HOT CHOCOLATE

Ingredients

2 star anise
3-4 cloves
1 inch cinnamon stick
cup rum
1 cup chopped dark chocolate
1 cup fresh cream
cup cocoa powder + for dusting
4 cups full fat milk
cup castor sugar
Marshmallow for garnish

Method

1. Heat fresh cream in a non-stick pan, add dark chocolate and cook till chocolate melts completely. Take the pan off the heat and allow to cool slightly. Add rum and mix well.
2. Take cocoa powder in a bowl, add 1 cup milk and whisk till well combined.
3. Add remaining milk in a non-stick deep pan, add castor sugar and mix well.
4. Add star anise, cloves, cinnamon stick and bring to a boil. Add coco powder mixture and cook for 3-4 minutes on a medium heat or till mixture comes to a boil. Stir occasionally.
5. Strain the mixture into a jar and froth the mixture using an electric frothing machine.
6. Pour a portion of the rum mixture into individual serving glasses and pour hot chocolate over it. Dust some coco powder on top and garnish with marshmallows.
