Spiced Chicken | Sanjeev Kapoor Khazana

Chicken pieces cooked in freshly ground spicy masala till dry.

SPICED CHICKEN

Ingredients

750 grams chicken on bone, cut into pieces
1 teaspoon coriander seeds
1 teaspoon cumin seeds
5-6 cloves
6-8 green cardamoms
6-8 black peppercorns
1 inch cinnamon
1 inch ginger, finely chopped
1 tablespoon chopped garlic
1-2 green chillies
1 tablespoon chopped fresh coriander leaves
Salt to taste
1 tablespoon oil
1 medium onion, sliced

Method

1. Dry-roast coriander seeds, cumin seeds, cloves, cardamoms, peppercorns and cinnamon in a non-stick pan till fragrant.
2. Grind together roasted spices, ginger, garlic and broken green chillies alongwith some water and chopped coriander to make a smooth paste.
3. Take chicken in a bowl. Add ground paste and mix. Add salt and mix well. Set aside to marinate for 30 minutes.
4. Heat oil in a non-stick pan. Add onion and sauté till golden. Add marinated chicken and mix. Add some water, mix, cover and cook till chicken is done.
5. Serve hot garnished with a coriander sprig.
