Watch this video to find out how to make this recipe.SPICY CARIBBEAN CHICKEN SKEWERS - (Serves - 4)Ingredients2-3 bird’s eye chillies, finely chopped250 grams boneless chicken, cut into cubes2 tablespoons orange juiceJuice of 1 lemon2 tablespoons dark rum2 tablespoons soy sauce1 inch ginger, finely chopped Crushed black peppercorns to taste Salt to taste1 tablespoon chopped garlic1 teaspoon fennel seeds1 tablespoon vinegarOil for greasing + for bastingChopped spring onion greens for garnishingMethod1. Combine orange juice, lemon juice, rum, soy sauce, ginger, bird’s eye chillies, crushed peppercorns, salt, garlic, fennel seeds and vinegar in a bowl and mix. Add chicken and mix well. Refrigerate to marinate for 2 hours. 2. Preheat an electric griller and grease with some oil.3. Skewer marinated chicken cubes onto individual satay sticks and reserve the leftover marinade for basting.4. Place the skewers on preheated griller and grill till golden from all sides and chicken is fully cooked, basting with the reserved marinade and some oil. 5.
