Spicy Caribbean Chicken Skewers | Sanjeev Kapoor Khazana

SPICY CARIBBEAN CHICKEN SKEWERS - (Serves - 4)

Ingredients

2-3 bird’s eye chillies, finely chopped
250 grams boneless chicken, cut into cubes
2 tablespoons orange juice
Juice of 1 lemon
2 tablespoons dark rum
2 tablespoons soy sauce
1 inch ginger, finely chopped
Crushed black peppercorns to taste
Salt to taste
1 tablespoon chopped garlic
1 teaspoon fennel seeds
1 tablespoon vinegar
Oil for greasing + for basting
Chopped spring onion greens for garnishing

Method

1. Combine orange juice, lemon juice, rum, soy sauce, ginger, bird’s eye chillies, crushed peppercorns, salt, garlic, fennel seeds and vinegar in a bowl and mix. Add chicken and mix well. Refrigerate to marinate for 2 hours.
2. Preheat an electric griller and grease with some oil.
3. Skewer marinated chicken cubes onto individual satay sticks and reserve the leftover marinade for basting.
4. Place the skewers on preheated griller and grill till golden from all sides and chicken is fully cooked, basting with the reserved marinade and some oil.
5. Serve hot garnished with spring onion greens.
