Creamy dip made with a combination of avocado and fresh spinach leaves.

SPINACH AND AVOCADO DIP

Ingredients

6-8 fresh spinach leaves
1 medium avocado
1 fresh jalapeno, finely chopped
1 tablespoon chopped garlic
1 small onion, finely chopped
1 tablespoon lemon juice
5 tablespoons sour cream
Salt to taste
1 tablespoon chopped fresh parsley + for garnishing

Method

1. Grind together jalapeno, garlic, onion, lemon juice, sour cream, salt, 1 tablespoon chopped parsley, avocado flesh and torn spinach leaves to make a smooth mixture.
2. Serve garnished with chopped parsley.
