A wholesome one pot meal made with the combination of spinach leaves and feta cheese.SPINACH AND FETA CLAFOUTI Ingredients2 cups shredded spinach 100 grams feta cheese, cut into cubes 2 teaspoons oil½ cup chopped onions½ cup chopped spring onion bulbs 2 eggsSalt to taste2 tablespoons refined flour ½ cup milk½ teaspoon crushed black peppercorns¼ cup dill leaves2 tablespoons chopped spring onion greens½ cup grated mozzarella cheeseMethod1. Preheat oven at 180º C.2. Heat oil in a non-stick pan. Add onions and spring onion bulbs, mix and sauté for 1 minute.3. Add spinach and sauté for 1 minute. Remove from heat and set aside. 4. Break eggs in a bowl, add salt and flour and whisk well. Add milk and whisk to a smooth mixture.5. Add salt, crushed peppercorns and dill leaves to the cooked spinach mixture and mix well.6. Transfer the spinach mixture into a baking dish and pour the egg mixture over it. Top with spring onion greens, mozzarella cheese and feta cheese.7. Put the dish in the preheated oven and bake for 10-12 minutes.8.
