Spinach and Parmesan Muffin | Sanjeev Kapoor Khazana

Freshly baked muffins made with the combination of fresh spinach leaves and parmesan cheese. A must try !

SPINACH AND PARMESAN MUFFIN

Ingredients

100 grams fresh spinach, blanched and chopped
¼ cup parmesan cheese powder
2 cups refined flour
1 egg
½ cup olive oil
1 cup + 2 tablespoons milk
1 tablespoon baking powder
½ teaspoon salt
1 teaspoon castor sugar

Method

1. Preheat oven at 180ºC. Line a silicon muffin mould tray with muffin cases.
2. Cream together egg, olive oil and milk till light.
3. Sieve together the flour, baking powder and salt into the egg mixture. Fold well.
4. Add spinach, ⅔ of the parmesan cheese powder and castor sugar and mix well.
5. Spoon in the prepared mixture into the moulds filling ¾th. Put the tray on a baking tray, place the tray in the preheated oven and bake for 20-25 minutes.
6. Remove from oven, demould and top with the remaining parmesan cheese powder. Serve immediately.

Preparation Time: 10-12 minutes
Cooking Time: 20-25 minutes
