SPINACH QUICHE: A BUTTERY PASTRY FULL OF SPINACH, SHALLOTS, MUSHROOMS, AND CHEESE

THE FULL RECIPE FOR SPINACH QUICHE

Ingredients

For dough:
2 cups flour
1 large egg (or 2 small eggs)
125 g butter
tsp salt

For filling
2 shallots
2 garlic cloves
500 g baby spinach
200 g white button mushroom (canned or fresh)
150 g mozzarella cheese

For sauce
2 eggs
1 cup milk
a ground nutmeg
1 tsp ground black pepper
tsp salt

Directions

FILLING
Cut the shallots into thin circles
Break and mince the garlic cloves
Place the shallots and garlic into a pot
Add 2 tbsp of olive oil and sear on medium heat for 3 to 4 minutes; then set aside
Wash and dry the spinach. Place in a pot in small amounts and sear for 2 minutes on medium heat. Then add a new bunch of spinach while continuing to stir.
Once the spinach is cooked, drain its extra juice using a strainer
Drain the mushrooms and set aside (if they are canned)

SAUCE
In a bowl, grate half of the nutmeg, add 1 tsp of black pepper, tsp of salt, 2 eggs and then whisk thoroughly.
Add 1 cup of milk, mix and set aside

DOUGH
Crack 1 large egg and tsp of salt in a large bowl
Whisk the egg and add 125 g of butter at room temperature
Sift 2 cups of flour then knead the ingredients until achieving a crumbly dough
Then place the dough on a counter for evenly flatting the dough
The dough will be crumbly, so it will break easily; try having homogenous thickness, dont worry about crumbled/broken pieces. The pieces can later be used to cover the tart pan

FORMING THE QUICHE
Butter the tart pan and place the dough into it.
Cover the bottom and the sides of the tart pan with the pieces of the dough. The consistency of the dough allows it to easily stick broken pieces together to cover up every corner of the pan
Place the cooked and drained spinach over the dough
Then layer the mushrooms followed by the shallot/garlic mixture and finally pour the sauce over them
Let the quiche rest for minimum of 30 minutes
Then cook the quiche for 1 hour in a 400 F oven
After an hour, take the quiche out of the oven, add the shredded mozzarella on top and return to the oven for 5 minutes of cooking or until the cheese melts
After 5 minutes, take the quiche out of the oven and add a decorative layer of vegetables and mozzarella sprinkles; return to the oven for 3 minutes of cooking
Your quiche is ready to serve

You can create a tart or muffin sized quiches with the same ingredients; its rich taste will remain the same, so spoil yourself!
