THE FULL RECIPE FOR SPINACH QUICHEIngredientsFor dough:2 cups flour1 large egg (or 2 small eggs)125 g butter tsp saltFor filling2 shallots2 garlic cloves500 g baby spinach200 g white button mushroom (canned or fresh)150 g mozzarella cheeseFor sauce2 eggs1 cup milk a ground nutmeg1 tsp ground black pepper tsp saltDirectionsFILLINGCut the shallots into thin circlesBreak and mince the garlic clovesPlace the shallots and garlic into a potAdd 2 tbsp of olive oil and sear on medium heat for 3 to 4 minutes; then set asideWash and dry the spinach. Place in a pot in small amounts and sear for 2 minutes on medium heat. Then add a new bunch of spinach while continuing to stir.Once the spinach is cooked, drain its extra juice using a strainerDrain the mushrooms and set aside (if they are canned)SAUCEIn a bowl, grate half of the nutmeg, add 1 tsp of black pepper, tsp of salt, 2 eggs and then whisk thoroughly. Add 1 cup of milk, mix and set asideDOUGHCrack 1 large egg and tsp of salt in a large bowlWhisk the egg and add 125 g of butter at room temperatureSift 2 cups of flour then knead the ingredients until achieving a crumbly doughThen place the dough on a counter for evenly flatting the dough The dough will be crumbly, so it will break easily; try having homogenous thickness, dont worry about crumbled/broken pieces. The pieces can later be used to cover the tart panFORMING THE QUICHEButter the tart pan and place the dough into it. Cover the bottom and the sides of the tart pan with the pieces of the dough. The consistency of the dough allows it to easily stick broken pieces together to cover up every corner of the panPlace the cooked and drained spinach over the doughThen layer the mushrooms followed by the shallot/garlic mixture and finally pour the sauce over themLet the quiche rest for minimum of 30 minutesThen cook the quiche for 1 hour in a 400 F ovenAfter an hour, take the quiche out of the oven, add the shredded mozzarella on top and return to the oven for 5 minutes of cooking or until the cheese meltsAfter 5 minutes, take the quiche out of the oven and add a decorative layer of vegetables and mozzarella sprinkles; return to the oven for 3 minutes of cookingYour quiche is ready to serveSERVINGSpinach quiche is full of flavourYou can create a tart or muffin sized quiches with the same ingredients; its rich taste will remain the same, so spoil yourself!Bon Appetite!
