Spinach rice/Keerai satham/Variety rice | Gayathiri's Cookbook

The health benefits of spinach are plentiful. It doesn't take much time or ingredients to make this healthy and delicious rice. My hubby and kids love this rice, so I make this very often for them.

Ingredients:
Rice- 1 cup
Spinach- 2.5 cups
Oil/ghee- 2 tbsp
Mustard seeds- 1/2 tsp
Red chillies- 2
Moong dal- 1/2 cup
Onion- 1
Tomatoes- 2
Turmeric powder- 1/4 tsp
Salt- 3/4 tsp
Hing- A pinch
Sambar powder- 2 tsp

Directions:
1.Cook 1 cup basmati rice/ regular raw rice. Keep it ready.
2. Soak 1/2 cup moongdal for 20 minutes.
3. Heat 2 tsp oil. Add mustard seeds. When it starts to crackle, add onions and saute until translucent.
4.Add tomatoes and cook until soft.Then add turmeric powder, salt, hing and sambar powder and saute for a minute.
5. Add soaked moongdal and 1 cup of water.Let it boil for 3-5 minutes.
6. Then add spinach and cook until the spinach leaves have wilted.
Finally add the cooked rice and ghee. mix it well.

Spinach rice is ready!!
