Quesadilla bursting with mexican flavours served with peach salsa. A must try recipe !SPRING ONION AND PIMENTO QUESADILLAIngredients1 stalk spring onion green, chopped1 medium red bell pepper1 medium yellow bell pepper1 medium green capsicum4 tortillas1 medium tomato1½ tablespoons oil + for brushing 1 tablespoon chopped garlic1 medium onion, chopped1 teaspoon chopped jalapenosSalt to taste ½ tablespoon chopped fresh coriander leaves 1 cup grated mozzarella cheesePeach salsa3-4 peaches, chopped1 peach1 medium onion, sliced and deseeded1 medium tomato, deseeded and pulp removed1 tablespoon lemon juice1 teaspoon chopped jalapenosSalt to taste 1 tablespoon chopped fresh coriander leavesMethod1. Deseed peppers, capsicum and tomatoes and cut into thin strips. 2. Heat oil in a non-stick pan. Add garlic and mix. Add onions, mix and sauté till translucent.3. Add peppers and capsicum strips and toss to mix. Add salt and jalapenos and mix well.4. Add tomato strips and turn off the heat. Add spring onion greens and chopped coriander and mix well. Transfer the vegetable mixture into a bowl.5. To prepare peach salsa, grind togetherchopped peaches, onion, tomato, lemon juice, jalapenos and salt to a fine paste.Transfer into a bowl. 6. Cut the whole peach into small pieces.7. Add chopped peach and chopped coriander to the salsa and mix well. Refrigerate to chill. 8. To make quesadilla, warm tortillas in a non-stick pan. Spread some mozzarella cheese on one side of tortilla. Layer with some prepared vegetable mixture and again add some cheese. Fold and cook till evenly done from both sides, brushing with some oil. 9.
