SPRING ONION BONDAIngredients3-4 spring onions1 tsp red chilli powder¼ tsp turmeric powder1 tsp cumin powder1 tsp coriander powder½ tsp garam masala powder½ tsp black pepper powderSalt to taste10-12 curry leaves, chopped2 tbsps chopped fresh coriander leaves¼ cup rice flour1 cup gram flour (besan)Oil for deep fryingCoffee or tea to serveMethod1. Thinly slice spring onions with the greens. Transfer them into a bowl. Add red chilli powder, turmeric powder, cumin powder, coriander powder, garam masala powder, black pepper powder, salt, curry leaves, coriander leaves, rice flour and gram flour and mix well. Add ¼ cup water and mix till well combined and a thick batter is formed. 2. Heat sufficient oil in a kadai.3. Take small portions of the batter and shape it into a ball. Slide in a few of them at a time into the hot oil and deep fry till golden brown and crisp. Drain on an absorbent paper. 4. Serve hot with coffee or tea.
