Sprouts & Tomato Uttapam with Peanut Chutney

I am making this ever-popular breakfast recipe from South India with protein rich sprouts & olive oil to make it a real healthy dish. The name, Uttapam, comes from Tamil words Appam & Utthia meaning poured appam. I am serving this dish with a hot & tangy peanut chutney which comes out real tasty. Try this recipe at your home and comment below if you like it.

Ingredients-
Half cup of green gram
Half tea spoon grated ginger
2 green chillies chopped
Chopped coriander leaves
Salt
Del Monte extra light olive oil
4 cups dosa batter
2 large tomatoes, sliced
Water

Method-
Take the green gram, wash and wrap in a muslin cloth and keep overnight to make sprouts.
In a grinder take the sprouts, grated ginger, green chillies chopped and chopped coriander leaves and little water & little salt & grind to a fine paste.
Mix the sprouts mix with dosa batter in a bowl
Put a tawa on the stove & when hot brush the tawa with extra light olive oil
Spread the Uttapam mix on the tawa
Put slices of tomatoes on top
Cook both sides well by sprinkling some olive oil
Peanut Chutney
Ingredients
Half a cup of roasted peanuts
2 green chillies chopped
Half a cup roasted chana dal
2 garlic cloves
One table spoon lime juice
Salt
2 table spoon extra light olive oil
Water
Method
Take half a cup of roasted peanuts in a grinder, green chillies chopped, roasted chana dal, garlic cloves chopped, lime juice, salt, little water & grind to a fine paste.

Tadka preparation -
Take 2 table spoon of oil and when the oil is hot add one tea spoon of mustard seeds a pinch of heeng, 3 to 4 curry leaves and two red chillis and mix well.
Pour the tadka on top of the chutney
