Because this Sri Lankan rice when made in earthen cookware, is a fabulous rice preparation with the subtle flavours of the curry leaves, pandan leaves and lemongrass.SRI LANKAN RICEIngredients1 cups Basmati rice, soaked for 30 minutes and drained2-3 tbsps ghee3-4 green cardamoms6-8 black peppercorns2-3 cloves2 medium onions, sliced10-15 curry leaves1 inch lemongrass stalk, roughly chopped2 pandan leaves, roughly chopped tsp turmeric powderSalt to taste3 cups thin coconut milkFried onions for garnishMethod1. Heat ghee in earthenware pot. Add green cardamoms, black peppercorns, cloves and saut till the spices are fragrant.2. Add onions and saut till translucent.3. Add curry leaves, lemongrass, pandan leaves and mix well.4. Add turmeric powder and saut for a few seconds.5. Add drained rice and saut for 2-3 minutes.6. Add salt, coconut milk and mix well. Once the mixture comes to a boil, cover and cook for 10-12 minutes on medium heat.7.
