Pomfrets coated with freshly ground lemon grass flavoured paste and steamed.STEAMED POMFRET WITH LEMONGRASSIngredients2 medium pomfret, heads removed 1 lemongrassSalt to taste2tablespoons lemon juice1 medium stalk celery5-6 spring onion bulbs2-3 green chillies1 inch ginger1 tablespoon chopped fresh coriander leaves1 bay leaf5-6 garlic cloves1 tablespoon light soy sauce½ teaspoon lemon zest1 large carrot, peeled and cut into juliennes1 teaspoon honey1 teaspoonsesame seedsMethod1. Sprinkle some salt and drizzle 1 tablespoon lemon juice on the pomfret and rub well on both sides. Set aside.2. Roughly chop lemongrass, celery, spring onion bulbs, green chillies and ginger. Place them in a blender jar alongwith chopped coriander, bay leaf, garlic, soy sauce, ½ tablespoon lemon juice, lemon zest and salt. Add water as required and blend into a smooth paste. 3. Apply the paste evenly on both sides of the pomfret. Set aside for half an hour. 4. Steam the pomfret in a Chinese bamboo steamer for 7-8 minutes or till the fish is cooked.5. To make the salad, place carrot in a bowl. Add remaining lemon juice, salt, honey and sesame seeds and mix well. 6. Place the prepared salad on a serving plate. Put the steamed fish on other side and serve immediately.
