ginger shreds for decoration
1 small Thai pepper, cut into small circles (optional)
coriander stems for decoration (optional)
Marinating
⅛ teaspoon white pepper
2 teaspoons sugar
1 tbsp. fermented black beans(dou-chi), roughly chopped
1 tbsp. minced ginger
4-6 garlic cloves, finely chopped
1 tbsp. oyster sauce
½ tbsp. light soy sauce
1 tbsp. Chinese cooking wine or rice wine
Starch water
2 tablespoons cornstarch
2 tablespoons water
