Delicious and crispy stir-fried eggplant pieces with a sweet and spicy sauce base. STIR FRIED BRINJALSIngredients 4-5 long brinjals1 tablespoon oil + for deep-frying2 tablespoons cornstarchSalt to tasteCrushed black peppercorns to taste2 tablespoons lemon juice2 teaspoons red chilli flakes1 tablespoon chopped garlic2 tablespoons sweet chilli sauce1 tablespoon tomato ketchup1 teaspoon vinegar1-2 stalks spring onion greens, finely choppedToasted sesame seeds for garnishingMethod1. Heat sufficient oil in a pan.2. Cut brinjals into medium strips and transfer into a bowl. Add cornstarch, salt, crushed peppercorns, 1 tablespoon lemon juice and 1 teaspoon chilli flakes and mix well.3. Deep-fry brinjals into hot oil till golden and crisp. Drain on absorbent paper.4. Heat 1 tablespoon oil in a non-stick pan. Add garlic and sauté till golden. Add sweet chilli sauce and tomato ketchup and mix well.5. Add remaining chilli flakes, salt, crushed peppercorns, remaining lemon juice and vinegar and mix well. Add brinjals and toss to mix. Switch off heat, add spring onion greens and toss to mix.6.
