Stir Fried Garlic Chicken with Coriander | Sanjeev Kapoor Khazana

Chicken pieces stir fried with garlic and coriander.

STIR FRIED GARLIC CHICKEN WITH CORIANDER

Ingredients

3 tablespoons chopped garlic
400 grams boneless chicken, cut into cubes
¼ small bunch fresh coriander leaves with stems
Salt to taste
White pepper powder to taste
1 tablespoon dark soy sauce
1 egg
2 tablespoons cornstarch
1 tablespoon oil + for deep-frying
3 green chillies
3 tablespoons fish sauce
1½ teaspoons sugar
Juice of ½ lemon
A fresh coriander sprig for garnishing

Method

1. Take chicken cubes in a bowl. Add salt, 1 tablespoon chopped garlic, pepper powder, ¼ tablespoon soy sauce and egg and mix well. Add cornstarch and mix well. Set aside to marinate for 10-15 minutes.
2. Heat sufficient oil in a wok. Deep-fry marinated chicken cubes till golden and chicken is fully cooked. Drain on absorbent paper.
3. Finely chop coriander stems. Slice green chillies diagonally.
4. Heat 1 tablespoon oil in a non-stick wok. Add remaining garlic and sliced green chillies and sauté on high heat till garlic turns light brown.
5. Add chopped coriander stems, mix and sauté for 10 seconds. Add remaining soy sauce and fish sauce and toss to mix.
6. Add sugar and mix well. Add fried chicken and toss well.
7. Finely chop coriander leaves.
8. Add lemon juice to the pan and toss. Add chopped coriander leaves and toss again. Switch off heat.
9. Serve hot garnished with coriander sprig.
