स्टर फ्राइड पेरी पेरी शकरकंद | Stir Fried Peri Peri Sweet Potatoes | Sanjeev Kapoor Khazana

Crispy sweet potatoes in a flavourful concoction is a treat for tastebuds on any given day. This easy stir fry recipe will become your favourite in no time. The best part is that the flavour of peri-peri mix which is otherwise used only with french fries, but here, it is used in the best way with sweet potatoes, and hat is a show stopper!

STIR FRIED PERI PERI SWEET POTATOES

Ingredients

400 grams sweet potatoes, scraped, boiled and cut into wedges
2 tsps peri peri spice mix
2 tbsps corn flour
1 tbsp oil + for deep frying
1 inch ginger, chopped
1 tbsp chopped garlic
2 green chillies, chopped
Crushed black peppercorns to taste
1 tbsp red chilli sauce
2-3 tbsps sweet chilli sauce
Salt to taste
2 tsps toasted white sesame seeds
2-3 tbsps chopped spring onion greens + for garnish

Method

1. Take sweet potatoes in a bowl. Add corn flour and mix well.
2. Heat sufficient oil in a kadai. Slide the sweet potato pieces and deep fry till golden brown and crisp. Drain on absorbent paper and set aside.
3. Heat 1 tbsp oil in a nonstick wok. Add ginger, garlic and sauté for 30 seconds.
4. Add green chillies, crushed peppercorns, red chilli sauce, sweet chilli sauce, peri peri spice mix, salt and mix well.
5. Add 2-3 tbsps water and mix well. Add fried sweet potatoes and toss.
6. Add white sesame seeds, spring onion greens and toss well.
7. Transfer into a serving plate, sprinkle spring onion greens and serve hot.
