The best part is that the flavour of peri-peri mix which is otherwise used only with french fries, but here, it is used in the best way with sweet potatoes, and hat is a show stopper!STIR FRIED PERI PERI SWEET POTATOESIngredients400 grams sweet potatoes, scraped, boiled and cut into wedges2 tsps peri peri spice mix2 tbsps corn flour1 tbsp oil + for deep frying1 inch ginger, chopped1 tbsp chopped garlic2 green chillies, choppedCrushed black peppercorns to taste1 tbsp red chilli sauce2-3 tbsps sweet chilli sauceSalt to taste2 tsps toasted white sesame seeds2-3 tbsps chopped spring onion greens + for garnishMethod1. Take sweet potatoes in a bowl. Add corn flour and mix well.2. Heat sufficient oil in a kadai. Slide the sweet potato pieces and deep fry till golden brown and crisp. Drain on absorbent paper and set aside.3. Heat 1 tbsp oil in a nonstick wok. Add ginger, garlic and sauté for 30 seconds.4. Add green chillies, crushed peppercorns, red chilli sauce, sweet chilli sauce, peri peri spice mix, salt and mix well.5. Add 2-3 tbsps water and mix well. Add fried sweet potatoes and toss.6. Add white sesame seeds, spring onion greens and toss well.7.
