STIR FRIED TOFU WITH ASIAN GREENSIngredients200 grams silken tofu1 small carrot2 tablespoons oil + to deep fry1 small purple cabbage, cut into cubes1 small broccoli, separated into florets and blanched1 small pakchoy1 small Chinese cabbage1 inch ginger, chopped5-6 garlic cloves, choppedSalt to taste½ teaspoon crushed black peppercorns1 teaspoon soy sauce1 tablespoon lemon juiceMethod1. Peel and finely slice the carrot. Further cut into fine juliennes.2. Heat sufficient oil in a kadai and deep fry the carrot juliennes till crisp. Drain on absorbent paper and set aside.3. Heat oil in a non-stick pan, add ginger and garlic and sauté for a minute.4. Add purple cabbage and broccoli florets and sauté for another minute.5. Add pakchoy and Chinese cabbage, salt, crushed black peppercorns, soy sauce and lemon juice, toss well and cook till the vegetables soften slightly. 6. Add silken tofu and gently toss. 7.
