Fresh cut vegetables stir fried with mild spices and fried basil leavesSTIR FRIED VEGETABLES WITH FRIED BASILIngredients6-7 baby corn, sliced1 medium red bell pepper, cut into 1 inch pieces1 medium cucumber, peeled, deseeded and sliced4-5 fried basil leaves + for garnishing 1 tablespoon oil2 teaspoons vinegar ½ cup dried shiitake mushrooms, soaked1 cup tinned water chestnuts1 tablespoon chopped garlic1 medium onion, sliced1 tablespoon soy sauceSalt to taste1 teaspoon brown sugarCrushed black peppercorns to taste½ cup cashewnutsMethod1. Heat oil in a non-stick wok.2. Discard stems of mushrooms and roughly chop. Halve water chestnuts.3. Add garlic to the wok and sauté till golden. Add onion and sauté till golden. 4. Add baby corn and toss to mix. Add halved water chestnuts, toss to mix and cook for a minute. 5. Add chopped mushrooms and toss to mix. Add red bell pepper and cucumber and toss to mix. Add soy sauce, salt, brown sugar, crushed peppercorns, cashewnuts, toss to mix and cook for a minute.6. Add saltand broken fried basil leaves and toss to mix.7.
