Street Stye Veg Parantha Sanjeev Kapoor Khazana

STREET STYLE MIXED VEGETABLE PARANTHA

Ingredients

2 medium potatoes, boiled, peeled and mashed
cup boiled and crushed green peas
cup grated cauliflower
cup squeezed grated cabbage
cup grated carrots
2 tbsps boiled and crushed corn kernels
2 tbsps finely chopped French beans
2-3 tbsps finely chopped onions
Readymade whole wheat flour dough made with 1 cups whole wheat flour
2 green chillies, chopped
1 tbsp coriander powder
1 tsp red chilli powder
1 tsp cumin powder
tsp chaat masala
1 tsp garam masala powder
Salt to taste
2-3 tbsps chopped fresh coriander leaves
Whole wheat flour for dusting
Oil for cooking
Pickle for serving
Yogurt for serving


Method

1. Take potatoes in a bowl. Add green peas, cauliflower, cabbage, carrots, corn, French beans, onions, green chillies, coriander powder, red chilli powder, cumin powder, chaat masala, garam masala powder, salt, coriander and mix well.
2. Take a portion of the dough and make cavity in the centre. Stuff the prepared stuffing, gather the edges and seal properly.
3. Dust some whole wheat flour on the surface and roll out into a thick disk.
4. Heat a nonstick tawa. Place the prepared parantha and roast on medium heat for 2-3 minutes. Flip, drizzle some oil and cook on other side for 2-3 minutes more.
5. Flip, drizzle some more oil and cook for a minute more.
6. Serve hot with pickle and yogurt.
