We start with a mix of yellow and red waxy potatoes, which are both affordable and flavorful. You can use any stock of your choice (chicken, beef, vegetable, or even water), ground black pepper, salt, butter, and garlic to season the potatoes. The slow cooker does the rest of the work for you.

After a few hours of slow cooking, your potatoes will be tender and ready to mash. You can choose to leave some chunks or whip them into a creamy consistency, depending on your preference. Ingredients
2.2 kg (5 pounds) potatoes, cut into chunks (peeled if you want)
1 diced onion
175 mL ( cup) chicken broth / stock
2-4 cloves garlic, crushed
60 mL ( cup) butter
Salt and pepper to taste
60 mL ( cup) sour cream
125 mL ( cup) cream or milk +/-
Grated cheese to taste

Method:
Toss the potatoes, salt, pepper, onion, broth, garlic, and butter into a 6qt slow cooker.
Cover and cook on high for 4 hours or low for 6-7 hours, until fork tender.
Mash potatoes; stir in the sour cream, milk and cheese.
Keep on low or warm setting until ready to serve.
