Stuffed Capsicum

Ingredients for Batter:
Gram flour 1 ½ cup
Rice flour ¼ cup
Red chili powder ½ tsp
Turmeric powder ¼ tsp
Garlic powder ½ tsp
Carom seeds ½ tsp
Baking soda 1/2 tsp
Salt 1 tsp or to taste
Water 1 cup or as required
Shan Chaat Masala 1 tbsp
Green Capsicum (medium sized) 5-6
Oil (for frying)

Ingredients for Stuffing:
Onion (chopped) 1 cup
Potatoes (boiled cubes) 1½ cup
Sweet Corn 1 cup
Tomatoes (chopped) 1 cup
Coriander leaves (chopped) as required
Carrot (grated) 1/2 cup
Tamarind Sauce 2 tbsp
Red chili powder 1/2 tsp
Shan Chaat masala 1 tbsp
Lemon juice 2 tbsp
Salt ½ tsp / to taste


Directions:
1. In a bowl, add gram flour, rice flour, red chili powder, turmeric powder, garlic powder, carom seeds, baking soda, salt, water, Shan Chaat Masala and mix well.
2. Take a whole green capsicum, dip in the prepared batter and deep fry until golden brown.
3. Stain and keep aside and cool down to room temperature.
4. Cut the fried capsicum into two equal parts.
5. Remove the seeds and keep aside.
6. In a bowl add onion, potatoes, sweet corn, tomatoes, coriander leaves, carrot, tamarind sauce, red chili powder, shan chaat masala, lemon juice, salt and mix well.
7. Now fill in the capsicums with the prepared filling.
8. Sprinkle Shan Chaat masala and serve.
