Squid rings stuffed with interesting seafood mixture dipped into batter and deep fried.STUFFED SQUID RINGSIngredients3 squids, cut into thick ringsOil for deep-frying100 grams fish fillets, roughly chopped100 grams medium prawns, shelled and deveined½ small bunch spinach, blanchedSalt to tasteCrushed black peppercorns to taste1 tablespoon sesame oil2 eggs½ cup refined flour 1 tablespoon toasted sesame seedsMethod1. Heat sufficient oil in a pan. 2. To prepare stuffing, grind fish fillets, prawns, spinach, salt, crushed peppercorns and sesame oil to a fine paste. Set aside. 3. Blanch squid rings in salted water for 30 seconds. Strain and transfer in chilled water. 4. Fill the blanched squid rings with stuffing.5. Break eggs in a bowl, add salt and crushed peppercorns and whisk well. 6. Combine flour, sesame seeds, salt and crushed peppercorns in a bowl and mix well. Transfer onto a plate.7. Coat each stuffed squid ring with flour mixture and dip in the egg mixture. Coat them again with flour mixture.8. Deep-fry prepared squid rings in hot oil till golden and crisp. Drain on absorbent paper.9.
