STUFFED TOMATO BHAJIYATomatoes stuffed with a sweet and spicy stuffing, coated with batter and deep fried to golden goodness.Ingredients5-6 small tomatoesStuffing½ cup roasted peanut4-5 garlic cloves2-3 green chillies1 inch ginger1 cup coriander leavesSalt to taste2 tbsps scraped fresh coconut1 tbsp toasted white sesame seeds½ tsp sugarA pinch of asafoetida (hing)Batter1 cup gram flour (besan)¼ tsp turmeric powderA pinch of red chilli powderA pinch of asafoetida (hing)Salt to tasteA pinch of baking sodaOil for deep fryingTo serveLasoon chutneyDates and tamarind chutneyMethod1. Trim the eyes of tomato and core the center to make a cavity and remove the pulp and reserve in a bowl.2. To make the stuffing, put peanuts in a food processor, add garlic, green chillies, ginger, coriander leaves, reserved tomato pulp, salt, coconut and grind into a coarse paste.3. Transfer in a bowl and add roasted sesame seeds, sugar, asafoetida and mix well.4. Stuff each tomato cavity with the stuffing.5. To make the batter, combine together gram flour, turmeric powder, red chilli powder, asafoetida, salt, baking soda and add ¼ cup water in a bowl. Mix till a semi-thick batter of coating consistency is formed.6. Heat sufficient oil in a kadai.7. Dip stuffed tomato in the batter and coat well, gently slide it in the hot oil and deep-fry till golden brown and crisp. Drain on absorbent paper.8.
